Discover Barbaglia Winery & DOC Boca Wines

This year, we are honored to host Barbaglia Winery, a boutique vineyard in Cavallirio (Novara), run by Sergio and Silvia Barbaglia. Their DOC Boca wines, a blend of Nebbiolo (Spanna) and Vespolina, are aged for 24 months in oak barrels and further refined in the bottle, resulting in a complex, mineral-rich red wine with elegant tannins.

Did You Know? The Story of Spanna Grapes

Did you know that Nebbiolo is called Spanna in Northern Piedmont? While genetically identical to the Nebbiolo used in Barolo and Barbaresco, Spanna grapes thrive in the cooler climate and mineral-rich volcanic soils of Novara and Vercelli, giving the wine a distinctive character with unique aromatics and refined structure.

Piemontese cuisine is deeply rooted in rustic traditions and local ingredients. Two must-try specialties featured in our menu include:

🔹 Paniscia – A rich, hearty risotto from Novara, made with Carnaroli rice, beans, cabbage, pancetta, pork rind, sausage, and red wine. Perfect for winter dining!

🔹 Tapulone – A finely chopped slow-cooked stew, traditionally made with donkey meat, simmered with red wine, onions, carrots, celery, and spices. This centuries-old dish is a perfect match for Boca DOC wine.
